Soft, spiced cookie sandwiches filled with creamy apple cider-spiced filling — a perfect autumn dessert you can hold in your hands.

Ingredients

Cookies:

  • 1½ cups apple cider (reduced to ½ cup)

  • 2½ cups all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • 1½ tsp cinnamon

  • ¼ tsp nutmeg

  • ¼ tsp ground ginger

  • ½ cup brown sugar

  • ½ cup granulated sugar

  • ½ cup vegetable oil

  • 2 large eggs

  • 1 tsp vanilla extract

  • ½ cup buttermilk

Filling:

  • 8 oz cream cheese

  • ½ cup unsalted butter

  • 2½ cups powdered sugar

  • 1 tsp vanilla extract

  • Optional: 1 tbsp reduced cider or ½ tsp cinnamon

Instructions

  • Reduce apple cider to ½ cup. Cool.

  • Mix dry ingredients (flour, baking powder, spices, salt).

  • Beat oil, sugars, eggs, cider, vanilla, and buttermilk. Add dry ingredients. Mix until just combined.

  • Scoop onto parchment-lined sheets. Bake at 350°F for 10–12 minutes.

  • Cool completely.

  • Beat cream cheese and butter. Add powdered sugar, vanilla, and optional spices. Mix until fluffy.

  • Assemble cookies with filling and sandwich together.

  • Chill until set. Serve at room temperature.

Notes

Store in the fridge for up to 4 days. Freeze for longer storage. Great with cider or tea.
