Soft, spiced cookie sandwiches filled with creamy apple cider-spiced filling — a perfect autumn dessert you can hold in your hands.
Cookies:
1½ cups apple cider (reduced to ½ cup)
2½ cups all-purpose flour
1 tsp baking powder
½ tsp baking soda
½ tsp salt
1½ tsp cinnamon
¼ tsp nutmeg
¼ tsp ground ginger
½ cup brown sugar
½ cup granulated sugar
½ cup vegetable oil
2 large eggs
1 tsp vanilla extract
½ cup buttermilk
Filling:
8 oz cream cheese
½ cup unsalted butter
2½ cups powdered sugar
1 tsp vanilla extract
Optional: 1 tbsp reduced cider or ½ tsp cinnamon
Reduce apple cider to ½ cup. Cool.
Mix dry ingredients (flour, baking powder, spices, salt).
Beat oil, sugars, eggs, cider, vanilla, and buttermilk. Add dry ingredients. Mix until just combined.
Scoop onto parchment-lined sheets. Bake at 350°F for 10–12 minutes.
Cool completely.
Beat cream cheese and butter. Add powdered sugar, vanilla, and optional spices. Mix until fluffy.
Assemble cookies with filling and sandwich together.
Chill until set. Serve at room temperature.
Store in the fridge for up to 4 days. Freeze for longer storage. Great with cider or tea.
