A warm, moist sheet cake packed with fresh apples and cinnamon spice — simple to make, perfect for sharing, and absolutely comforting.
2½ cups all-purpose flour
1½ tsp baking powder
½ tsp baking soda
1 tsp cinnamon
¼ tsp nutmeg (optional)
½ tsp salt
¾ cup unsalted butter (softened)
1 cup granulated sugar
½ cup light brown sugar
3 large eggs
2 tsp vanilla extract
1 cup buttermilk or sour cream
2½ cups peeled, diced apples
Optional Cinnamon Glaze:
1 cup powdered sugar
½ tsp cinnamon
2–3 tbsp milk or cream
Preheat oven to 350°F. Grease a 9×13 pan.
Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In a large bowl, cream butter and sugars until fluffy.
Beat in eggs one at a time, then vanilla.
Alternate adding dry ingredients and buttermilk. Mix just until combined.
Fold in diced apples. Spread batter into pan.
Bake 35–40 minutes, until golden and set.
Cool slightly. Drizzle with glaze if using.
Great with nuts or raisins added.
Stores well at room temp or chilled.
Flavor improves after a day.
