A warm, moist sheet cake packed with fresh apples and cinnamon spice — simple to make, perfect for sharing, and absolutely comforting.

Ingredients

  • 2½ cups all-purpose flour

  • 1½ tsp baking powder

  • ½ tsp baking soda

  • 1 tsp cinnamon

  • ¼ tsp nutmeg (optional)

  • ½ tsp salt

  • ¾ cup unsalted butter (softened)

  • 1 cup granulated sugar

  • ½ cup light brown sugar

  • 3 large eggs

  • 2 tsp vanilla extract

  • 1 cup buttermilk or sour cream

  • 2½ cups peeled, diced apples

Optional Cinnamon Glaze:

  • 1 cup powdered sugar

  • ½ tsp cinnamon

  • 23 tbsp milk or cream

Instructions

  • Preheat oven to 350°F. Grease a 9×13 pan.

  • Mix flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  • In a large bowl, cream butter and sugars until fluffy.

  • Beat in eggs one at a time, then vanilla.

  • Alternate adding dry ingredients and buttermilk. Mix just until combined.

  • Fold in diced apples. Spread batter into pan.

  • Bake 35–40 minutes, until golden and set.

  • Cool slightly. Drizzle with glaze if using.

Notes

  • Great with nuts or raisins added.

  • Stores well at room temp or chilled.

  • Flavor improves after a day.
