A no-bake layered dessert of spiced sautéed apples, speculoos cookies, creamy mascarpone, and rich caramel — inspired by classic German and Italian flavors.

Ingredients

Apple Layer:

  • 34 apples, diced

  • 2 tbsp butter

  • 2 tbsp brown sugar or honey

  • 1 tsp cinnamon

  • Pinch nutmeg & cloves

  • 1 tbsp lemon juice

Caramel Sauce:

  • ½ cup sugar

  • 3 tbsp butter

  • ¼ cup heavy cream

  • Sea salt (optional)

Mascarpone Cream:

  • 8 oz mascarpone cheese

  • 1 cup heavy cream

  • ¼ cup powdered sugar

  • 1 tsp vanilla extract

Base Layer:

  • 200 g speculoos cookies

  • Apple juice or spiced liqueur for dipping

Instructions

  • Sauté apples in butter, sugar, and spices until soft. Add lemon juice. Cool.

  • Make caramel sauce by melting sugar, adding butter and cream, and whisking until smooth. Cool.

  • Beat mascarpone with sugar and vanilla. Fold in whipped cream.

  • Dip cookies briefly in juice or liqueur and layer in a dish.

  • Add mascarpone cream, apple mixture, and caramel. Repeat layers.

  • Chill for at least 4 hours. Top with crushed cookies and caramel before serving.

Notes

Make-ahead friendly. Use individual glasses for serving. Swap spices or add nuts for variation.
