A no-bake layered dessert of spiced sautéed apples, speculoos cookies, creamy mascarpone, and rich caramel — inspired by classic German and Italian flavors.
Apple Layer:
3–4 apples, diced
2 tbsp butter
2 tbsp brown sugar or honey
1 tsp cinnamon
Pinch nutmeg & cloves
1 tbsp lemon juice
Caramel Sauce:
½ cup sugar
3 tbsp butter
¼ cup heavy cream
Sea salt (optional)
Mascarpone Cream:
8 oz mascarpone cheese
1 cup heavy cream
¼ cup powdered sugar
1 tsp vanilla extract
Base Layer:
200 g speculoos cookies
Apple juice or spiced liqueur for dipping
Sauté apples in butter, sugar, and spices until soft. Add lemon juice. Cool.
Make caramel sauce by melting sugar, adding butter and cream, and whisking until smooth. Cool.
Beat mascarpone with sugar and vanilla. Fold in whipped cream.
Dip cookies briefly in juice or liqueur and layer in a dish.
Add mascarpone cream, apple mixture, and caramel. Repeat layers.
Chill for at least 4 hours. Top with crushed cookies and caramel before serving.
