Dry:
2 cups all-purpose flour
½ cup granulated sugar
¼ cup brown sugar
2 tsp baking powder
½ tsp baking soda
1½ tsp cinnamon
½ tsp salt
Wet:
2 large eggs
¾ cup milk or buttermilk
½ cup vegetable oil or melted butter
1 tsp vanilla extract
Add-Ins:
1½ cups diced peeled apples
Optional Streusel:
¼ cup flour
¼ cup brown sugar
½ tsp cinnamon
2 tbsp cold butter
Preheat oven to 375°F. Line or grease a 12-cup muffin pan.
Mix dry ingredients in a large bowl. Whisk wet ingredients separately.
Combine wet and dry, stirring just until mixed. Fold in apples.
Fill muffin cups ¾ full. Add streusel if desired.
