Moist and fluffy apple cinnamon muffins bursting with tender apple chunks and cozy spice — perfect for breakfast or snacking.

Ingredients

Dry:

  • 2 cups all-purpose flour

  • ½ cup granulated sugar

  • ¼ cup brown sugar

  • 2 tsp baking powder

  • ½ tsp baking soda

  • 1½ tsp cinnamon

  • ½ tsp salt

Wet:

  • 2 large eggs

  • ¾ cup milk or buttermilk

  • ½ cup vegetable oil or melted butter

  • 1 tsp vanilla extract

Add-Ins:

  • 1½ cups diced peeled apples

Optional Streusel:

  • ¼ cup flour

  • ¼ cup brown sugar

  • ½ tsp cinnamon

  • 2 tbsp cold butter

Instructions

  • Preheat oven to 375°F. Line or grease a 12-cup muffin pan.

  • Mix dry ingredients in a large bowl. Whisk wet ingredients separately.

  • Combine wet and dry, stirring just until mixed. Fold in apples.

  • Fill muffin cups ¾ full. Add streusel if desired.

  • Bake for 18–22 minutes until golden and set. Cool slightly before serving.
