A beautiful and easy Vegan Apple Tart with a flaky crust, thinly sliced apples, warm spices, and no dairy or eggs. Perfect for fall and holiday baking.

For the Crust:

  • 1 ¼ cups all-purpose flour

  • 2 tbsp maple syrup or cane sugar

  • ½ tsp salt

  • ½ cup cold vegan butter or coconut oil

  • 24 tbsp ice water

For the Filling:

  • 3 medium apples, thinly sliced

  • 2 tbsp maple syrup or coconut sugar

  • 1 tbsp lemon juice

  • 1 tsp cinnamon

  • ⅛ tsp nutmeg

  • 1 tbsp cornstarch or arrowroot powder

Optional Glaze:

  • 2 tbsp apricot jam

  • 1 tsp water

Instructions

  • Make the crust: Whisk flour, sugar, and salt. Cut in vegan butter until crumbly. Add ice water until dough forms. Chill for 30 mins.

  • Slice apples and toss with lemon juice, syrup, cinnamon, nutmeg, and starch. Let sit 10 mins.

  • Roll dough into a circle and place in a 9-inch tart pan. Trim and chill for 10 mins.

  • Preheat oven to 375°F (190°C).

  • Layer apples in a spiral or rustic pattern. Bake for 40–45 minutes.

  • For glaze: Warm jam with water and brush on apples after baking.

  • Cool slightly before slicing and serving.

Notes

Use firm apples. Make as a galette if you don’t have a tart pan. Serve warm with vegan ice cream or chilled with coffee.
