A beautiful and easy Vegan Apple Tart with a flaky crust, thinly sliced apples, warm spices, and no dairy or eggs. Perfect for fall and holiday baking.
For the Crust:
1 ¼ cups all-purpose flour
2 tbsp maple syrup or cane sugar
½ tsp salt
½ cup cold vegan butter or coconut oil
2–4 tbsp ice water
For the Filling:
3 medium apples, thinly sliced
2 tbsp maple syrup or coconut sugar
1 tbsp lemon juice
1 tsp cinnamon
⅛ tsp nutmeg
1 tbsp cornstarch or arrowroot powder
Optional Glaze:
2 tbsp apricot jam
1 tsp water
Make the crust: Whisk flour, sugar, and salt. Cut in vegan butter until crumbly. Add ice water until dough forms. Chill for 30 mins.
Slice apples and toss with lemon juice, syrup, cinnamon, nutmeg, and starch. Let sit 10 mins.
Roll dough into a circle and place in a 9-inch tart pan. Trim and chill for 10 mins.
Preheat oven to 375°F (190°C).
Layer apples in a spiral or rustic pattern. Bake for 40–45 minutes.
For glaze: Warm jam with water and brush on apples after baking.
Cool slightly before slicing and serving.
Use firm apples. Make as a galette if you don’t have a tart pan. Serve warm with vegan ice cream or chilled with coffee.
