This vegan apple tart features a flaky dairy-free crust and sweet cinnamon-spiced apples, all topped with a maple or apricot glaze. Elegant, simple, and perfect for any occasion.
Crust:
1¼ cups all-purpose flour
1 tbsp sugar
¼ tsp salt
½ cup vegan butter or solid coconut oil
3–5 tbsp ice water
Filling:
3–4 apples, thinly sliced
2–3 tbsp maple syrup or sugar
1 tsp cinnamon
1 tbsp lemon juice
1 tsp vanilla extract (optional)
Glaze:
2 tbsp apricot jam or maple syrup
1 tbsp water
Make crust: Mix flour, sugar, and salt. Cut in vegan butter. Add ice water until dough forms. Chill 30 minutes.
Slice apples and toss with maple syrup, cinnamon, lemon juice, and vanilla.
Roll dough into a 10–11 inch circle. Transfer to tart pan or baking sheet.
Arrange apples over crust in layers. Fold edges if making a galette.
Bake at 375°F for 35–40 minutes until golden.
Brush with warm glaze. Cool before slicing.
Chill dough for best texture
