For the Apple Filling:
4 medium apples, peeled and diced
2 tbsp butter
3 tbsp brown sugar
1 tsp cinnamon
¼ tsp nutmeg (optional)
1 tsp cornstarch + 1 tbsp water
For the Crumb Layer:
8 graham crackers or digestive biscuits, crushed
3 tbsp melted butter
1 tbsp sugar
Pinch of salt
For the Topping:
2 cups whipped cream (or whipped topping)
100g cream cheese (optional, softened)
2 tbsp powdered sugar
½ tsp vanilla extract
Other:
½ cup caramel sauce
Cook diced apples with butter, brown sugar, cinnamon, and nutmeg for 6–8 minutes. Stir in cornstarch slurry and simmer until thickened. Cool.
Mix crushed crackers with melted butter, sugar, and salt. Spoon into serving cups and press lightly.
Whip cream to stiff peaks. Add powdered sugar and vanilla. Optionally, fold in softened cream cheese.
Layer each cup: crumbs, apple filling, caramel drizzle, whipped topping. Repeat if space allows.
Top with more caramel and garnish with extra crumbs or nuts. Chill before serving.
Make up to 1 day ahead. Add whipped topping and final drizzle just before serving.
