A moist, warmly spiced apple cake topped with a rich brown sugar icing. Perfect for fall gatherings or anytime you crave a cozy dessert.
For the Cake:
2 cups diced apples (peeled)
2 cups all-purpose flour
1 cup granulated sugar
½ cup vegetable oil
2 large eggs
½ cup buttermilk
1 tsp vanilla extract
1½ tsp ground cinnamon
½ tsp ground nutmeg
¼ tsp ground cloves
1 tsp baking soda
1 tsp baking powder
½ tsp salt
For the Icing:
1 cup packed brown sugar
¼ cup butter
2–3 tbsp milk
1 cup powdered sugar
Preheat oven to 350°F (175°C). Grease and flour a 9×13-inch pan.
In a bowl, whisk eggs, sugar, oil, buttermilk, and vanilla.
In another bowl, mix flour, baking soda, baking powder, salt, and spices.
Combine wet and dry ingredients. Fold in diced apples.
Pour into prepared pan and bake for 40–45 minutes, or until a toothpick comes out clean.
Let cake cool in the pan on a wire rack.
For icing, cook brown sugar, butter, and milk in a saucepan over medium heat until bubbly. Simmer 2 minutes.
Remove from heat and whisk in powdered sugar. Pour icing over cooled cake and spread quickly.
Add nuts or raisins if desired.
Let icing set fully before slicing.
Store at room temp for up to 3 days or refrigerate for longer freshness.
