Ingredients

3 cups grated carrots
2 medium apples, diced or grated
2 tablespoons lemon juice
2 tablespoons mayonnaise or yogurt
1 tablespoon honey or maple syrup
1/4 teaspoon salt
1/4 teaspoon black pepper
1/3 cup raisins
1/4 cup chopped walnuts (optional)
1 tablespoon parsley (optional)

Instructions

  • Peel and grate the carrots into a large bowl.
  • Core and dice or grate apples, then toss with lemon juice.
  • Combine apples with carrots.
  • Mix mayonnaise or yogurt with honey, salt, and pepper.
  • Pour dressing over the salad and toss gently.
