Soft & Chewy Gingerbread Men Cookies are classic holiday treats full of warm spices and rich molasses flavor. Easy to make, no chill time needed, and perfect for decorating or gifting.
3 cups all-purpose flour
3/4 cup packed brown sugar
3/4 cup unsalted butter, softened
2/3 cup molasses
1 large egg
1 tsp baking soda
1 tbsp ground ginger
1 1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/2 tsp salt
1 tsp vanilla extract (optional)
Preheat oven to 180°C (350°F). Line baking sheets with parchment paper.
Cream butter and brown sugar until fluffy.
Add molasses and egg. Mix until smooth.
In a separate bowl, whisk dry ingredients.
Gradually add dry to wet, mixing to form a soft dough.
Roll dough on a floured surface to 1/4 inch thick.
Cut out shapes and place on baking sheets.
Bake for 8–10 minutes, until edges are set.
Cool on sheet for 5 minutes, then transfer to rack.
Decorate when fully cool if desired.
No chilling required.
For extra spice, add a pinch of nutmeg.
Decorate with icing or melted chocolate.
