2 cups canned chickpeas drained and rinsed
1 large avocado diced
1 cup cherry tomatoes halved
1 cup diced cucumber
1/4 cup thinly sliced red onion
1/2 cup crumbled feta cheese
2 tablespoons fresh lemon juice
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
Drain and rinse chickpeas and pat dry.
Combine chickpeas, tomatoes, cucumber, and red onion.
Fold in diced avocado.
Crumble feta over mixture.
Whisk lemon juice, olive oil, salt, and pepper.
Toss salad gently with dressing.
