Ingredients

2 cups canned chickpeas drained and rinsed
1 large avocado diced
1 cup cherry tomatoes halved
1 cup diced cucumber
1/4 cup thinly sliced red onion
1/2 cup crumbled feta cheese
2 tablespoons fresh lemon juice
2 tablespoons olive oil
2 tablespoons chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Drain and rinse chickpeas and pat dry.

  • Combine chickpeas, tomatoes, cucumber, and red onion.

  • Fold in diced avocado.

  • Crumble feta over mixture.

  • Whisk lemon juice, olive oil, salt, and pepper.

  • Toss salad gently with dressing.

  • Garnish with parsley and serve.

Notes

Add avocado just before serving to prevent browning.
