Creamy Broccoli Salad (no bacon) is a crunchy, colorful, and creamy side dish with broccoli, carrots, apples, and a tangy dressing.

Ingredients

4 cups fresh broccoli florets
1 cup shredded carrots
1/2 cup red onion, thinly sliced
1 cup apple, diced (optional)
1/2 cup dried cranberries or raisins (optional)
1/3 cup slivered almonds or sunflower seeds
1/2 cup mayonnaise
1/4 cup plain Greek yogurt or sour cream
2 tablespoons apple cider vinegar or lemon juice
2 teaspoons honey or maple syrup (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper

Instructions

  • Wash and trim broccoli; shred carrots, slice onion, dice apple.

  • Toast almonds or seeds in a dry skillet for 2–3 minutes.

  • Whisk mayonnaise, yogurt, vinegar, honey, salt, and pepper to make dressing.

  • Combine vegetables, fruit, and nuts in a large bowl.

  • Pour dressing over salad and toss gently.

  • Chill for at least 30 minutes before serving.

  • Garnish with extra nuts or herbs if desired.

Notes

Prepare ahead but combine dressing just before serving to maintain crunch; adjust seasoning to taste.
