Creamy Broccoli Salad (no bacon) is a crunchy, colorful, and creamy side dish with broccoli, carrots, apples, and a tangy dressing.
4 cups fresh broccoli florets
1 cup shredded carrots
1/2 cup red onion, thinly sliced
1 cup apple, diced (optional)
1/2 cup dried cranberries or raisins (optional)
1/3 cup slivered almonds or sunflower seeds
1/2 cup mayonnaise
1/4 cup plain Greek yogurt or sour cream
2 tablespoons apple cider vinegar or lemon juice
2 teaspoons honey or maple syrup (optional)
1/2 teaspoon salt
1/4 teaspoon black pepper
Wash and trim broccoli; shred carrots, slice onion, dice apple.
Toast almonds or seeds in a dry skillet for 2–3 minutes.
Whisk mayonnaise, yogurt, vinegar, honey, salt, and pepper to make dressing.
Combine vegetables, fruit, and nuts in a large bowl.
Pour dressing over salad and toss gently.
Chill for at least 30 minutes before serving.
Garnish with extra nuts or herbs if desired.
Prepare ahead but combine dressing just before serving to maintain crunch; adjust seasoning to taste.
