A crisp cucumber salad mixed with tender beef and creamy cheese, tossed in a flavorful dressing for a light yet satisfying dish.

2 large cucumbers, thinly sliced
8 ounces cooked beef, thinly sliced or shredded
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup mayonnaise
2 tablespoons fresh dill, chopped
1 small red onion, finely diced
1 clove garlic, minced
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon smoked paprika (optional)
1 tablespoon olive oil

Instructions

  • Thinly slice cucumbers, sprinkle with salt, and drain for 10 minutes. Pat dry.
  • Cook beef with olive oil, salt, and pepper if needed, then slice thinly.
  • Whisk sour cream, mayonnaise, lemon juice, garlic, dill, smoked paprika, salt, and pepper to make dressing.
  • Toss cucumbers and red onion in a bowl.
  • Layer beef on top and sprinkle cheese evenly. Fold gently.
  • Pour dressing over salad and toss lightly to coat.
  • Chill for 20–30 minutes before serving.
