This luxurious millionaire cheesecake features a buttery biscuit base, creamy vanilla filling, soft caramel layer, and silky dark chocolate ganache. Rich, no-bake, and irresistibly elegant.

Ingredients

  • 250g digestive biscuits or graham crackers

  • 100g unsalted butter, melted

  • 600g full-fat cream cheese, room temperature

  • 100g caster sugar

  • 1 tsp pure vanilla extract

  • 300ml double cream (heavy cream), cold

  • 200g soft caramel sauce

  • 150g dark chocolate (50–70%), chopped

  • 100ml double cream (for ganache)

  • Sea salt flakes (optional)

Instructions

  • Crush biscuits into fine crumbs and mix with melted butter.

  • Press into a springform tin and chill for 30 minutes.

  • Beat cream cheese and sugar until smooth. Add vanilla.

  • Whip cream to soft peaks and fold into cheese mixture.

  • Spoon over base, smooth, and chill for 4+ hours.

  • Spread caramel sauce over set cheesecake, chill again.

  • Heat cream, pour over chocolate, and stir until smooth.

  • Cool slightly, pour ganache over caramel, chill 1 hour.

  • Release from tin and garnish with sea salt flakes if desired.

Notes

Use full-fat cream cheese for best texture. Allow ample chilling time for layers to set.
