250g digestive biscuits or graham crackers
100g unsalted butter, melted
600g full-fat cream cheese, room temperature
100g caster sugar
1 tsp pure vanilla extract
300ml double cream (heavy cream), cold
200g soft caramel sauce
150g dark chocolate (50–70%), chopped
100ml double cream (for ganache)
Sea salt flakes (optional)
Crush biscuits into fine crumbs and mix with melted butter.
Press into a springform tin and chill for 30 minutes.
Beat cream cheese and sugar until smooth. Add vanilla.
Whip cream to soft peaks and fold into cheese mixture.
Spoon over base, smooth, and chill for 4+ hours.
Spread caramel sauce over set cheesecake, chill again.
Heat cream, pour over chocolate, and stir until smooth.
Cool slightly, pour ganache over caramel, chill 1 hour.
