A crisp, cooling cucumber salad with fresh herbs and a tangy Italian vinaigrette, perfect for spring and summer meals.

Ingredients

2 large English cucumbers, thinly sliced
1/4 small red onion, thinly sliced
3 tablespoons extra virgin olive oil
2 tablespoons red wine vinegar
1 tablespoon fresh lemon juice
1/2 teaspoon salt
1/4 teaspoon black pepper
1 tablespoon fresh parsley, chopped
1 tablespoon fresh basil, chopped
1 teaspoon sugar (optional)

Instructions

  • Slice cucumbers thinly and place in a bowl.
  • Lightly salt and let sit for 10 minutes, then pat dry.
  • Whisk olive oil, vinegar, lemon juice, salt, pepper, and sugar.
  • Add red onion to cucumbers.
  • Pour dressing over and toss gently.
  • Fold in parsley and basil lightly.
  • Let sit 10–15 minutes before serving.
