Golden, crispy sweet potato hash browns with a tender center, perfect for breakfast or as a side.

Ingredients

2 medium sweet potatoes, peeled and grated
1 small onion, finely chopped
2 cloves garlic, minced
1 large egg (or 1 tablespoon flaxseed meal + 3 tablespoons water)
1/4 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon smoked paprika
2 tablespoons olive oil or avocado oil
Optional: 2 tablespoons chopped fresh parsley or thyme

Instructions

  • Peel and grate sweet potatoes, removing excess moisture.
  • Combine sweet potatoes, onion, garlic, egg or flax mixture, salt, pepper, and paprika.
  • Heat oil in a skillet over medium heat.
  • Form 1/3 cup portions into patties, leaving space between each.
  • Cook 3–4 minutes per side until golden and crisp.
  • Drain on paper towels, garnish, and serve.
