Homemade BBQ Chicken Pizza with Caramelized Onions and Fresh Cilantro is smoky, sweet, and bright with melty cheese and a crisp crust.
1 pound boneless, skinless chicken breast, cooked and shredded
1/2 cup barbecue sauce, plus extra for brushing
1 medium red onion, thinly sliced
2 tablespoons olive oil
1 pre-made pizza dough (12–14 inches)
1 1/2 cups shredded mozzarella cheese
1/2 cup shredded cheddar cheese (optional)
1/4 cup fresh cilantro leaves, chopped
Salt and black pepper, to taste
Optional toppings: sliced jalapeños, red pepper flakes, smoked paprika
Preheat oven to 475°F (245°C) with pizza stone or baking sheet inside.
Caramelize onions in olive oil over medium-low heat 20–25 minutes.
Toss chicken with barbecue sauce; season with salt and pepper.
Roll out dough and transfer to parchment.
Brush with BBQ sauce, sprinkle cheese, add chicken and onions.
Bake 12–15 minutes until crust is golden and cheese bubbly.
Top with fresh cilantro and optional toppings; serve warm.
