For the Dough:
2 ½ cups all-purpose flour
2 ¼ tsp instant yeast (1 packet)
¾ cup warm milk
1 tbsp sugar
1 tsp salt
1 egg
2 tbsp melted butter
For the Filling:
1 cup shredded mozzarella
¼ cup grated Parmesan
Optional: ¼ cup shredded cheddar
For Garlic Butter:
4 tbsp unsalted butter
3–4 cloves garlic, minced
1 tbsp chopped parsley or Italian herbs
Pinch of salt
Mix warm milk, yeast, and sugar. Add flour, salt, egg, and melted butter. Knead until smooth.
Let dough rise 1 hour. Meanwhile, make garlic butter by melting butter and stirring in garlic and herbs.
Divide dough into 12 balls. Flatten, fill with cheese, and seal. Place in greased baking dish.
Let rise again for 30 minutes. Preheat oven to 375°F.
Brush with garlic butter. Bake 20–25 minutes until golden and bubbly.
Brush again with garlic butter. Serve warm.
Use low-moisture mozzarella to avoid soggy rolls.
Freeze unbaked rolls for later baking.
Add red pepper flakes for a spicy version.
