A retro, ultra-rich cake with a buttery crust and gooey cream cheese topping — made with boxed cake mix and pantry staples.
Bottom Layer:
1 box yellow cake mix
½ cup (1 stick) butter, melted
1 large egg
Topping:
8 oz cream cheese, softened
2 large eggs
1 tsp vanilla extract
3¾ to 4 cups powdered sugar
Optional: ½ cup chopped pecans or coconut
Preheat oven to 350°F. Grease a 9×13-inch pan.
Mix cake mix, melted butter, and egg. Press into bottom of pan.
In a bowl, beat cream cheese, eggs, vanilla, and powdered sugar until smooth.
Pour topping over crust. Bake 40–45 minutes, until edges are golden and center is slightly set.
Cool completely. Dust with powdered sugar and slice
Store in the fridge. Best served slightly chilled.
