These Mini Apple Pies are a delicious individual-sized dessert with a sweet, spiced apple filling, buttery crust, and a perfect balance of flavors. Great for any occasion!
For the Pie Crust:
2 1/2 cups all-purpose flour
1 tablespoon sugar
1/2 teaspoon salt
1 cup cold butter, cubed
6–8 tablespoons cold water
For the Apple Filling:
4 medium apples, peeled, cored, and sliced
1/4 cup sugar
1/4 cup brown sugar
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon lemon juice
2 tablespoons cornstarch
For the Topping (Optional):
1 tablespoon milk or egg wash (1 egg beaten with 1 tablespoon water)
1 tablespoon sugar
Preheat oven to 375°F (190°C) and grease a muffin tin.
Make the pie crust by combining flour, sugar, and salt. Cut in the cold butter, then add cold water and form a dough. Chill.
Roll out dough and cut into circles to fit the muffin tin.
Make the apple filling by mixing apples, sugar, cinnamon, nutmeg, lemon juice, and cornstarch.
Assemble pies by adding filling to the dough in the muffin tin, topping with another circle of dough, and sealing.
Brush with milk or egg wash, sprinkle with sugar, and bake for 30-35 minutes or until golden brown.
