1 ½ cups Medjool dates, pitted
1 cup raw almonds or walnuts
½ cup raw cacao powder
1–2 tbsp chia seeds or flaxseed meal
¼ cup shredded coconut, hemp seeds, or sunflower seeds
1 tbsp nut butter (optional)
1 tsp vanilla extract (optional)
Pinch of sea salt
Water as needed
Soak dates if dry. Drain well.
In a food processor, pulse nuts until crumbly.
Add dates, cacao, seeds, nut butter, vanilla, and salt. Process until sticky.
Press mixture into a parchment-lined pan.
Chill 1 hour, then slice into squares.
Customize with add-ins like goji berries or cacao nibs.
Store in fridge up to 2 weeks or freezer up to 3 months.
