A refreshing and elegant vegan finger sandwich combining matcha-flavored cream cheese and crisp cucumber slices.

Ingredients

6 slices soft white or whole-grain sandwich bread
2 tablespoons vegan cream cheese
1 teaspoon matcha powder
1 small English cucumber, thinly sliced
1 teaspoon lemon juice
1/2 teaspoon fresh dill, finely chopped
1/2 teaspoon chives, finely chopped
Pinch of black pepper
Optional: edible flowers for garnish

Instructions

  • Mix vegan cream cheese with matcha powder until smooth.

  • Slice cucumber thinly and toss with lemon juice, dill, and chives.

  • Trim bread crusts if desired and spread matcha cream cheese evenly on each slice.

  • Layer cucumber slices on the bread and sprinkle with black pepper.

  • Top with second slice of bread, pressing gently.

  • Cut sandwiches into fingers or triangles.

  • Optionally, garnish with edible flowers.

  • Chill 10–15 minutes before serving.

Notes
