These adorable no-bake gnome mini cheesecakes are festive, creamy, and perfect for Christmas. With a cookie crust, fluffy filling, and playful red hats, they’re as fun to make as they are to eat.

Ingredients

  • 1 1/2 cups crushed graham crackers

  • 1/3 cup melted butter

  • 12 oz cream cheese, softened

  • 1/2 cup powdered sugar

  • 3/4 cup heavy cream, whipped

  • 1 tsp vanilla extract

  • Red candy melts or white chocolate + red food coloring

  • Shredded coconut or white chocolate shavings

  • Mini marshmallows, M&Ms, or candy pearls (for noses)

  • Strawberries or candy cones (for hats)

Instructions

  • Line muffin pan with cupcake liners.

  • Mix crushed crackers and butter. Press into liners. Chill 15 minutes.

  • Beat cream cheese and powdered sugar. Add vanilla.

  • Fold in whipped cream gently. Spoon over crusts. Smooth tops.

  • Chill 4+ hours or overnight.

  • Dip strawberry or cone “hats” in red chocolate. Let set.

  • Top cheesecakes with coconut (beard), red hat, and candy nose.

  • Keep refrigerated until ready to serve.

Notes

Use silicone molds for easy release. Flavor the filling with citrus or mint. Decorate just before serving for best texture.
