1 ½ cups pitted Medjool dates
½ cup unsweetened cocoa powder
½ cup nut butter (almond or peanut)
¾ cup rolled oats
1 tsp vanilla extract
1–2 tbsp maple syrup (optional, to taste)
Pinch of salt
Optional: ¼ cup chocolate chips or chopped nuts
Line an 8×8-inch baking dish with parchment paper.
Soak dates in warm water for 10 minutes if dry, then drain.
Blend dates, cocoa, nut butter, and vanilla in a food processor until smooth.
Add oats and salt. Pulse until fully combined.
Stir in chocolate chips or nuts if using.
Press mixture firmly into the pan.
Chill in fridge for 1 hour or freezer for 30 minutes.
Slice into squares and serve.
Store in fridge for up to 7 days or freeze for 3 months.
