No-bake Gnome Mini Cheesecakes made with a cookie crust, creamy vanilla cheesecake filling, and adorable strawberry hats. A festive, fun dessert for the holiday season.
1 cup crushed graham crackers or cookies
4 tablespoons unsalted butter, melted
2 tablespoons granulated sugar
Filling:
8 oz cream cheese, softened
½ cup powdered sugar
1 teaspoon vanilla extract
¾ cup heavy cream, whipped (or 1½ cups whipped topping)
Topping:
12 whole strawberries, stemmed
12 red candy-coated chocolates (e.g. mini M&M’s)
½ cup whipped cream or frosting, for decorating
Line a muffin tin with 12 liners.
Mix cookie crumbs, melted butter, and sugar. Press into liners. Chill.
Beat cream cheese, powdered sugar, and vanilla until smooth. Fold in whipped cream.
Spoon filling over crusts. Smooth tops. Chill 2–3 hours until set.
Top each with a strawberry, pointed end up. Pipe whipped cream around base for beard and trim.
Add a candy nose. Chill until ready to serve.
Keep chilled. Add decorations just before serving for best freshness.
