Spinach and Feta Pinwheels, gluten free, featuring flaky gluten-free pastry filled with creamy feta and tender spinach baked into golden savory spirals.

Ingredients

1 sheet gluten-free puff pastry thawed
2 cups fresh spinach chopped
1 cup crumbled feta cheese
4 ounces cream cheese softened
2 cloves garlic minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1 egg beaten for wash

Instructions

  • Preheat oven to 400°F and line baking sheet.

  • Sauté garlic and spinach until wilted, then cool and drain excess moisture.

  • Mix spinach with feta, cream cheese, salt, and pepper.

  • Spread mixture over pastry and roll tightly into a log.

  • Chill log for 15 to 20 minutes.

  • Slice into rounds and place on baking sheet.

  • Brush with egg wash.

  • Bake 18 to 22 minutes until golden.

  • Cool slightly before serving.
