4 slices sourdough bread
1 cup fresh blueberries
4 ounces brie cheese, sliced
2 ounces white cheddar cheese, shredded
2 tablespoons unsalted butter, softened
1 tablespoon honey (optional)
1/4 teaspoon lemon zest
Pinch of salt

Instructions

  • Mash half the blueberries with lemon zest and salt.
  • Butter one side of each bread slice.
  • Layer brie, cheddar, and blueberry mixture on unbuttered sides.
  • Top with remaining bread, buttered sides out.
  • Heat a skillet over medium-low heat.
  • Cook 3–4 minutes per side until golden and cheese melts.
  • Remove, rest briefly, slice, and serve warm.
