Hearty Dublin Coddle is a traditional Irish stew made with sausages, bacon, potatoes, and onions simmered together for a rich and comforting meal.
6 pork sausages
4 slices thick bacon, chopped
4 medium potatoes, sliced
2 large onions, sliced
2 cloves garlic, minced
3 cups chicken broth
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped parsley
Cook bacon in a large pot until lightly browned.
Add sausages and brown them briefly.
Remove meat and sauté onions until softened.
Add garlic and cook briefly.
Layer potatoes, sausages, bacon, and onions in the pot.
Pour in broth and bring to a gentle simmer.
Cover and cook for 45–50 minutes until potatoes are tender.
Garnish with parsley and serve warm.
Simmer gently rather than boiling to keep the stew tender and flavorful.
