Irish Bacon and Cabbage Soup is a comforting dish made with smoky bacon, tender cabbage, potatoes, and vegetables simmered in a rich savory broth.

6 slices thick bacon, chopped
1 small onion, chopped
2 cloves garlic, minced
2 carrots, sliced
3 medium potatoes, diced
4 cups chopped green cabbage
6 cups chicken broth
½ teaspoon black pepper
2 tablespoons chopped parsley

Instructions

  • Cook chopped bacon in a large pot until lightly crisp.

  • Add onion and cook until softened.

  • Stir in garlic and cook briefly.

  • Add carrots and potatoes and cook for 2–3 minutes.

  • Pour in chicken broth and bring to a simmer.

  • Add cabbage and cook 25–30 minutes until vegetables are tender.

  • Season with pepper and garnish with parsley before serving.
