High-Protein Italian Pasta Salad is a hearty dish made with pasta, chicken, chickpeas, vegetables, mozzarella, and a tangy Italian dressing.

Ingredients

3 cups cooked pasta
2 cups cooked chicken breast, diced
1 cup chickpeas, rinsed and drained
1 cup cherry tomatoes, halved
1 cup diced cucumber
¼ cup sliced red onion
½ cup mozzarella pearls
3 tablespoons olive oil
1 tablespoon red wine vinegar
1 clove garlic, minced
½ teaspoon salt
¼ teaspoon black pepper
1 teaspoon Italian seasoning
2 tablespoons chopped parsley

Instructions

  • Cook pasta according to package instructions and cool.

  • Dice chicken and prepare vegetables.

  • Combine pasta, chicken, chickpeas, tomatoes, cucumber, onion, and mozzarella.

  • Whisk olive oil, vinegar, garlic, salt, pepper, and herbs.

  • Pour dressing over salad and toss gently.

  • Garnish with parsley and serve.

Notes

Allow the salad to rest briefly so the dressing absorbs into the pasta.
