2 pounds beef chuck cut into cubes
2 tablespoons olive oil
1 onion chopped
2 carrots diced
2 celery stalks diced
3 cloves garlic minced
2 tablespoons tomato paste
1 cup stout beer
1 1/2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon fresh thyme
1 bay leaf
1 cup frozen peas
1 sheet puff pastry
1 egg beaten
Salt and black pepper to taste
Preheat oven to 400°F.
Sear seasoned beef in olive oil and remove.
Sauté onion, carrots, and celery until softened.
Add garlic and tomato paste and cook briefly.
