Irish Pub Pie That Wows Everyone featuring tender beef, vegetables, and rich stout gravy topped with golden puff pastry.

Ingredients

2 pounds beef chuck cut into cubes
2 tablespoons olive oil
1 onion chopped
2 carrots diced
2 celery stalks diced
3 cloves garlic minced
2 tablespoons tomato paste
1 cup stout beer
1 1/2 cups beef broth
1 tablespoon Worcestershire sauce
1 teaspoon fresh thyme
1 bay leaf
1 cup frozen peas
1 sheet puff pastry
1 egg beaten
Salt and black pepper to taste

Instructions

  • Preheat oven to 400°F.

  • Sear seasoned beef in olive oil and remove.

  • Sauté onion, carrots, and celery until softened.

  • Add garlic and tomato paste and cook briefly.

  • Pour in stout and simmer 2 to 3 minutes.

  • Add broth, Worcestershire, thyme, bay leaf, and beef. Simmer 45 to 60 minutes until tender.

  • Stir in peas and remove bay leaf.

  • Top with puff pastry and brush with egg.

  • Bake 20 to 25 minutes until golden brown.

  • Rest 10 minutes before serving.

Notes

Allow filling to cool slightly before adding pastry for best texture.
