For the Muffins:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 cups granulated sugar
1/4 cup brown sugar
1 egg
1/2 cup vegetable oil
1 cup buttermilk
1 teaspoon vanilla extract
1 1/2 cups diced apples (about 2 medium apples)
Optional Topping:
2 tablespoons granulated sugar
1/2 teaspoon ground cinnamon
Preheat oven to 375°F (190°C) and grease or line a muffin tin with paper liners.
In a bowl, whisk dry ingredients. In another, combine wet ingredients and sugar. Mix until combined.
Fold in the diced apples.
Spoon batter into muffin cups and sprinkle with cinnamon-sugar topping.
