A creamy and crustless quiche made with cottage cheese, fresh spinach, and eggs, perfect for breakfast, brunch, or a light dinner.

1 cup cottage cheese
6 large eggs
1/2 cup milk
2 cups fresh spinach, chopped
1/2 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/2 cup finely chopped onion
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon ground nutmeg

Instructions

  • Preheat oven to 375°F and grease a 9-inch baking dish.
  • Sauté onions in olive oil until translucent, then add garlic briefly.
  • Add spinach and cook until wilted, then remove from heat.
  • Whisk eggs and milk in a bowl, then stir in cottage cheese and shredded cheeses.
  • Fold in spinach mixture and season with salt, pepper, and nutmeg.
  • Pour into baking dish and spread evenly.
  • Bake 35–40 minutes until set and lightly golden.
  • Let rest 10 minutes before slicing.
