4 boneless, skinless chicken breasts
Salt and black pepper, to taste
2 tablespoons olive oil
3 tablespoons butter
3 cloves garlic, minced
1/2 cup chicken broth
1/4 cup fresh lemon juice
1 teaspoon lemon zest
1 teaspoon dried thyme or 1 tablespoon fresh thyme
1 tablespoon flour or cornstarch (optional)
Fresh parsley, chopped

Instructions

  • Season chicken with salt and pepper.
  • Sear in olive oil 4–5 minutes per side until golden. Remove from skillet.
  • Add butter and garlic; cook until fragrant.
  • Stir in chicken broth, lemon juice, zest, and thyme; simmer. Add flour/cornstarch if thickening.
  • Return chicken, cook 5–7 minutes until 165°F.
  • Rest, then serve with sauce and parsley.
