A crisp and vibrant Spicy Spiral Cucumber Salad with chili, garlic, and a tangy sesame dressing.

Ingredients

2 English cucumbers spiral cut
1/2 teaspoon salt
2 tablespoons rice vinegar or fresh lime juice
1 tablespoon chili oil or 1/2 teaspoon crushed red pepper flakes
1 teaspoon sesame oil
1 teaspoon honey or sugar
1 clove garlic finely minced
1 tablespoon toasted sesame seeds optional
1 tablespoon fresh cilantro chopped optional

Instructions

  • Spiral cut cucumbers and place in a bowl.

  • Sprinkle with salt and let rest 10 to 15 minutes.

  • Pat cucumbers dry to remove excess moisture.

  • Whisk vinegar or lime juice, chili oil, sesame oil, honey or sugar, and garlic.

  • Pour dressing over cucumbers and toss gently.

  • Let marinate 10 minutes.

  • Garnish with sesame seeds and cilantro before serving.
