Lemon Chicken with Lemon Butter Sauce features tender chicken cutlets simmered in a bright and buttery lemon garlic sauce.
2 boneless skinless chicken breasts
½ teaspoon salt
½ teaspoon black pepper
¼ cup all-purpose flour
2 tablespoons olive oil
3 tablespoons butter
3 cloves garlic, minced
¾ cup chicken broth
¼ cup fresh lemon juice
1 teaspoon lemon zest
2 tablespoons chopped parsley
Slice chicken breasts into thinner cutlets and season with salt and pepper.
Lightly coat chicken in flour.
Heat olive oil and butter in a skillet and cook chicken until golden.
Remove chicken and sauté garlic briefly.
Add broth and lemon juice and simmer to reduce slightly.
Return chicken to the pan and spoon sauce over the top.
Sprinkle with parsley and lemon zest before serving.
