A fresh and colorful Mango Salad made with ripe mango, crisp vegetables, herbs, and a tangy lime dressing.
2 large ripe mangoes diced
1 English cucumber diced
1 red bell pepper thinly sliced
1/4 small red onion thinly sliced
1/4 cup fresh cilantro chopped
2 tablespoons fresh lime juice
1 tablespoon olive oil
1 teaspoon honey or maple syrup
1/4 teaspoon salt
1 small red chili thinly sliced optional
1 avocado diced optional
2 tablespoons toasted peanuts or cashews optional
Dice mangoes into bite sized pieces.
Chop cucumber, bell pepper, and red onion.
Combine mango, vegetables, and cilantro in a large bowl.
Whisk lime juice, olive oil, honey or maple syrup, salt, and chili if using.
Pour dressing over salad and toss gently to combine.
Fold in avocado if using and sprinkle with toasted nuts.
Let rest for 10 minutes before serving.
Use ripe but firm mangoes for best texture. Add nuts just before serving to maintain crunch. Best enjoyed the same day.
