4 medium flour tortillas
1 cup shredded mozzarella
1/2 cup crumbled feta
2 cups fresh baby spinach
1/2 small red onion thinly sliced
2 cloves garlic minced
2 tablespoons olive oil
1/2 teaspoon dried oregano
Salt and black pepper to taste

Instructions

  • Sauté red onion in olive oil until softened.

  • Add garlic and cook briefly.

  • Stir in spinach and cook until wilted.

  • Fill half of each tortilla with mozzarella, spinach mixture, feta, and oregano.

  • Fold tortillas and brush lightly with olive oil.

  • Cook 2 to 3 minutes per side until golden and melted.
