Mediterranean Quesadillas are crispy tortillas filled with spinach, feta, mozzarella, and red onion for a flavorful and satisfying lunch.
4 flour tortillas
2 cups fresh spinach, chopped
½ cup crumbled feta cheese
1 cup shredded mozzarella cheese
¼ cup thinly sliced red onion
1 tablespoon olive oil
½ teaspoon garlic powder
¼ teaspoon black pepper
Chop spinach and slice red onion.
Mix spinach, feta, mozzarella, and onion in a bowl.
Heat olive oil in a skillet over medium heat.
Place a tortilla in the skillet and add filling to one half.
Fold the tortilla and cook 2–3 minutes per side until golden.
Remove, slice into wedges, and serve warm.
