Mediterranean Quesadillas are crispy tortillas filled with spinach, feta, mozzarella, and red onion for a flavorful and satisfying lunch.

Ingredients

4 flour tortillas
2 cups fresh spinach, chopped
½ cup crumbled feta cheese
1 cup shredded mozzarella cheese
¼ cup thinly sliced red onion
1 tablespoon olive oil
½ teaspoon garlic powder
¼ teaspoon black pepper

Instructions

  • Chop spinach and slice red onion.

  • Mix spinach, feta, mozzarella, and onion in a bowl.

  • Heat olive oil in a skillet over medium heat.

  • Place a tortilla in the skillet and add filling to one half.

  • Fold the tortilla and cook 2–3 minutes per side until golden.

  • Remove, slice into wedges, and serve warm.

Notes

Brushing the tortilla lightly with olive oil before cooking helps create a crisp texture.
