1 can chickpeas drained
2 tablespoons olive oil
2 cloves garlic minced
1 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
1 cup cherry tomatoes halved
1/2 cucumber diced
1/4 red onion chopped
1 tablespoon lemon juice
1/2 cup Greek yogurt or tzatziki
1/3 cup feta cheese optional
Fresh parsley or dill

Instructions

  • Roast sweet potatoes at 400°F for 40–50 minutes until tender.
  • Sauté garlic and chickpeas with spices until warmed and slightly crisp.
  • Mix tomatoes, cucumber, onion, and lemon juice.
  • Slice open sweet potatoes and fluff inside.
