8 large eggs
1/4 cup milk
1 cup fresh spinach, chopped
1/2 cup feta cheese, crumbled
1/4 cup finely chopped onion
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried oregano
1 tablespoon olive oil or cooking spray

Instructions

  • Preheat oven to 350°F (175°C) and grease a muffin tin.
  • Sauté onion for 2–3 minutes, then add garlic for 30 seconds.
  • Add spinach until wilted, then cool and drain.
  • Whisk eggs, milk, salt, pepper, and oregano until smooth.
  • Fold in spinach mixture and feta.
  • Pour into muffin cups, filling three-quarters full.
  • Bake 18–22 minutes until set and lightly golden.
  • Cool slightly before removing and serving.
