2 pounds russet or Yukon Gold potatoes, peeled and cut into 1-inch cubes
1 packet Lipton Onion Soup Mix
1/2 cup unsalted butter, melted
1/2 cup water or low-sodium chicken broth
1/2 teaspoon black pepper
Optional: 1/4 cup sour cream or cream cheese
Optional: 1 teaspoon fresh parsley, chopped

Instructions

  • Peel and cube potatoes into 1-inch pieces.
  • Mix melted butter, onion soup mix, water or broth, and black pepper.
  • Pour mixture over potatoes in slow cooker and stir to coat.
  • Cook on low for 5–6 hours until tender.
