These Soft & Chewy Gingerbread Men Cookies are full of classic spice and holiday joy. Tender in the center with crisp edges, they’re ideal for decorating or enjoying plain.
3 cups all-purpose flour
3/4 tsp baking soda
1/4 tsp salt
1 tbsp ground ginger
1 tbsp ground cinnamon
1/2 tsp ground cloves
1/4 tsp nutmeg (optional)
3/4 cup unsalted butter, softened
3/4 cup packed dark brown sugar
1 large egg
1/2 cup unsulfured molasses
1 tsp vanilla extract
In a bowl, whisk flour, baking soda, salt, and spices.
In another bowl, cream butter and brown sugar until fluffy. Beat in egg, molasses, and vanilla.
Gradually mix in dry ingredients until dough forms. Divide and wrap in plastic.
Chill dough for at least 2 hours.
Preheat oven to 350°F (175°C). Roll dough to 1/4 inch and cut with gingerbread man cutter.
Place cookies on parchment-lined sheet. Bake 8–10 minutes.
Cool on pan for 5 minutes, then transfer to rack. Decorate when fully cool.
