These Soft & Chewy Gingerbread Men Cookies are full of classic spice and holiday joy. Tender in the center with crisp edges, they’re ideal for decorating or enjoying plain.

  • 3 cups all-purpose flour

  • 3/4 tsp baking soda

  • 1/4 tsp salt

  • 1 tbsp ground ginger

  • 1 tbsp ground cinnamon

  • 1/2 tsp ground cloves

  • 1/4 tsp nutmeg (optional)

  • 3/4 cup unsalted butter, softened

  • 3/4 cup packed dark brown sugar

  • 1 large egg

  • 1/2 cup unsulfured molasses

  • 1 tsp vanilla extract

Instructions

  • In a bowl, whisk flour, baking soda, salt, and spices.

  • In another bowl, cream butter and brown sugar until fluffy. Beat in egg, molasses, and vanilla.

  • Gradually mix in dry ingredients until dough forms. Divide and wrap in plastic.

  • Chill dough for at least 2 hours.

  • Preheat oven to 350°F (175°C). Roll dough to 1/4 inch and cut with gingerbread man cutter.

  • Place cookies on parchment-lined sheet. Bake 8–10 minutes.

  • Cool on pan for 5 minutes, then transfer to rack. Decorate when fully cool.

Notes

Chill is essential for shape and flavor. Store in airtight container for 1 week or freeze baked cookies for 1 month.
