A colorful and flavorful pasta salad combining smoky corn, tangy cheese, and a zesty, creamy dressing. Ideal for summer meals and casual gatherings

Ingredients

12 ounces rotini pasta
3 cups fresh corn kernels, grilled or roasted
1/2 cup mayonnaise
1/4 cup Greek yogurt
1/2 cup crumbled cotija cheese (or feta)
1/4 cup chopped fresh cilantro
1-2 teaspoons chili powder
1 teaspoon smoked paprika
2 tablespoons lime juice
1 small red bell pepper, diced
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup thinly sliced green onions
Optional: 1 jalapeño, finely diced

Instructions

  • Cook pasta according to package instructions; drain and rinse with cold water.
  • Grill or sauté corn until lightly charred.
  • Whisk together mayonnaise, Greek yogurt, lime juice, chili powder, smoked paprika, salt, and pepper.
  • Toss pasta, corn, bell pepper, green onions, and cilantro with dressing.
  • Fold in cotija cheese.
  • Refrigerate 30 minutes before serving; adjust seasoning as needed.
  • Optional: garnish with additional chili powder or cilantro.
