Pineapple Chicken and Rice is a sweet and savory dish featuring tender chicken, juicy pineapple, and vegetables in a flavorful sauce served over rice.
2 cups cooked jasmine rice
1 pound chicken breast, cubed
1 cup pineapple chunks
½ cup pineapple juice
1 tablespoon soy sauce
2 cloves garlic, minced
1 teaspoon grated ginger
1 tablespoon honey
1 bell pepper, diced
1 teaspoon cornstarch (optional)
2 tablespoons water (for slurry)
2 tablespoons chopped green onions
Cook rice according to package instructions and set aside.
Cook cubed chicken in a skillet until golden and cooked through.
Sauté garlic and ginger until fragrant.
Add bell peppers and pineapple and cook briefly.
Stir in pineapple juice, soy sauce, and honey and simmer.
Add cornstarch slurry if thicker sauce is desired.
Return chicken to skillet and cook until coated in sauce.
Serve over rice and garnish with green onions.
Fresh pineapple adds brighter flavor but canned pineapple works well for convenience.
