1 1/2 pounds boneless chicken thighs, cut into bite-sized pieces
2 cups long-grain white rice, rinsed
1 3/4 cups chicken broth
1 cup pineapple chunks, drained
1/3 cup pineapple juice
3 tablespoons soy sauce
2 tablespoons vegetable oil
3 cloves garlic, finely chopped
1 small onion, diced
1 red bell pepper, chopped
1 teaspoon ground ginger
1/2 teaspoon black pepper
1/2 teaspoon salt
2 green onions, sliced
1 tablespoon cornstarch
2 tablespoons water

Instructions

  • Brown chicken in oil until lightly golden.
  • Add onion and bell pepper and cook until softened.
  • Stir in garlic and ginger briefly.
  • Add soy sauce, broth, and pineapple juice.
  • Add rice and pineapple chunks evenly.
  • Cover and cook on low heat until rice is tender.
  • Stir in cornstarch slurry to lightly thicken sauce.
