1 1/2 pounds boneless skinless chicken thighs cut into pieces
1 cup fresh pineapple chunks
1 cup long-grain white rice
2 cups chicken broth
3 tablespoons low-sodium soy sauce
1 tablespoon brown sugar
2 cloves garlic minced
1 tablespoon fresh ginger grated
1 red bell pepper diced
1 tablespoon sesame oil
2 tablespoons cooking oil
2 green onions sliced
Salt and black pepper to taste
Cook chicken in oil until browned and cooked through, then remove.
Sauté garlic and ginger briefly.
Add bell pepper and cook 2 to 3 minutes.
Stir in rice and toast 1 minute.
Add broth, soy sauce, brown sugar, and sesame oil.
Cover and simmer 15 to 18 minutes until rice is tender.
Fold in pineapple and cooked chicken during last 5 minutes.
Rest 5 minutes, fluff, garnish, and serve.
