Traditional Irish One-Pot Chicken Dinner is a comforting meal with tender chicken, potatoes, carrots, and herbs simmered together in a flavorful broth.

Ingredients

4 bone-in chicken thighs or drumsticks
1 tablespoon butter or olive oil
1 small onion, chopped
3 cloves garlic, minced
3 medium potatoes, diced
2 carrots, sliced
4 cups chicken broth
1 teaspoon dried thyme
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped parsley

Instructions

  • Season chicken with salt and pepper.

  • Brown chicken in butter or oil in a large pot.

  • Remove chicken and sauté onion until soft, then add garlic.

  • Add potatoes and carrots and stir briefly.

  • Pour in chicken broth and thyme and bring to a simmer.

  • Return chicken to the pot and cover.

  • Cook 25–30 minutes until chicken and vegetables are tender.

  • Garnish with parsley and serve warm.

Notes

Browning the chicken first adds depth of flavor to the broth.
