Traditional Irish One-Pot Chicken Dinner is a comforting meal with tender chicken, potatoes, carrots, and herbs simmered together in a flavorful broth.
4 bone-in chicken thighs or drumsticks
1 tablespoon butter or olive oil
1 small onion, chopped
3 cloves garlic, minced
3 medium potatoes, diced
2 carrots, sliced
4 cups chicken broth
1 teaspoon dried thyme
½ teaspoon salt
½ teaspoon black pepper
2 tablespoons chopped parsley
Season chicken with salt and pepper.
Brown chicken in butter or oil in a large pot.
Remove chicken and sauté onion until soft, then add garlic.
Add potatoes and carrots and stir briefly.
Pour in chicken broth and thyme and bring to a simmer.
Return chicken to the pot and cover.
Cook 25–30 minutes until chicken and vegetables are tender.
Garnish with parsley and serve warm.
Browning the chicken first adds depth of flavor to the broth.
